A traditional Turkish delicacy featuring flaky, buttery layers and a savory spiced meat filling. ( Recipe by Chef Saadet Güngör)
Ingredients
Dough
- 4 cups flour
- Quarter packet fresh yeast
- 1 cup water
- 1 teaspoon salt
Filling
- 500g. ground beef
- 2 dried onions
- Half a bunch of parsley
- 1 cup walnuts
- Half a cup olive oil
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 250 gr butter
- 4 tablespoons tahini
Topping
- 1 egg
- Nigella seeds
- Sesame seeds
Method
First, prepare the minced meat filling. (Sauté the onions, add the minced meat and other ingredients.)
At the same time, prepare the rendered fat (internal fat) – keep both ready.
Prepare a soft dough with the dough ingredients. We don’t let it rise too much because we want a thin, flaky dough.
After preparing the dough, start rolling it out after 5 minutes. Pour rendered fat onto each rolled-out dough, greasing it as shown in the photo. Then fold it and put it in the refrigerator.
We divide the dough into 3 portions beforehand and put it in the refrigerator. Then, starting with the first dough, roll it out and place it on the baking tray.
Then, pour half of the minced meat filling. Then take the second dough from the refrigerator and roll it out. Spread the remaining minced meat filling on this layer.
Take the last dough from the refrigerator, roll it out, and place it on the top layer to close it. You can crack an egg on top and spread it with your hands.
We sprinkle some nigella seeds and sesame seeds on top, and bake at 200 degrees for 25 minutes, until the top is golden brown.
